In the spirit of healthy eating, I wanted to share with you my recipe for "Magic Soup" (otherwise known as Tuscan Vegetable Soup). I call it "Magic Soup" because anytime I am feeling low, or tired or sick, this soup just makes me feel better. I make up big batches and freeze it so I can enjoy it throughout the week. Here are the ingredients I use: Diced onion, carrots, celery, and zucchini (equal parts). Also add some minced garlic.

You will also need olive oil, chicken stock, a can of Italian diced tomatoes, Italian spices, white beans and fresh chopped spiniach.

I think the magical healing powers come from all the fresh vegetables- aren't the colors so pretty!?

You start by sauteing all the diced veggies and garlic in olive oil and Italian spices, until everything is just tender. Then you add chicken stock and the can of diced tomatoes.

Cover and cook for about 15 minutes on medium heat...I always use my favorite Le Crueset pot for this soup!

Next, add the chopped fresh spinach and cook until the spiniach is wilted.

Then add the drained white beans and cook another 5 minutes.

That's it..so simple. Who wouldn't love this big warm pot of tasty vegetable soup?

I also like to cook up a tray of Parmesean Breadsticks to serve along with it...

You can enjoy your Magic Soup chunky like my husband prefers it, or...

more "soupy" and "brothy" like me! Either way, it's a delicious and healthy meal on a cold night or whenever!
